What exactly is a tare – and how does it fit into TrueBrodo?
Tare (pronounced "tah-re") originates from Japanese cuisine. There, it refers to a concentrated seasoning sauce—often based on soy sauce, mirin, and dashi—used in dishes such as ramen or grilled dishes.
At TrueBrodo we use the principle in our own simple way:
A small ingredient or combination that you add directly to your warm bone broth – no cooking, no effort.
This way, with just a few ingredients, you can create a variety of flavors, depending on your mood, the season, or what your herb garden is currently producing.
We are not purists – but we love functional ideas from world cuisine.
Our Tare is therefore an invitation to improvise:
Fresh herbs, good oil, a squeeze of lime, grated ginger or a pinch of spice mix – and your broth will get a new flavor in seconds.
It's that easy:
Choose two or more ingredients from the list, add them to your warm TrueBrodo – stir, and enjoy.
It's best to chop herbs very finely so they blend well with the broth – for example, finely chop chives on a board or finely chop parsley.
Fresh herbs & flowers:
– Chives (also the flowers)
- Parsley
– Coriander
– Basil
– Mint
– Thyme
– Oregano
– Rosemary
Liquid aromatics:
– Soy sauce or tamari
– Sesame oil (roasted)
– Olive oil
– Splash of lemon or lime
Spices & Extras:
– Freshly ground black pepper
– Chili flakes
– Crushed or finely chopped garlic
– Grated ginger
– Cumin (ground or crushed – use sparingly)
Five-spice mixture (Chinese style – use sparingly):
– Pepper (e.g. black or white)
– Star anise
– Fennel seeds
- Cinnamon
– Carnation
These five spices can be finely ground together.
The mixture is intense – so it’s best to add only a little of it to the broth.
Once prepared, you can store them and use them as you wish – for example with a little sesame oil, a squeeze of lime and finely chopped chives.
